Freshness, Roasting, and Quality Standards

It means we roast based on demand rather than filling a warehouse. Our process includes resting the coffee 24 to 48 hours after roast, and packaging with freshness in mind.

We aim for coffee to be packed close to roast, after a short rest window. Exact timing can vary by order volume and shipping schedules, but our system is built for freshness, not long shelf staging.
We work within Specialty standards (80+), with a stated cupping range of 80 to 84, and we target reliable, repeatable quality rather than hype lots that do not perform consistently.

An Italian Officine Vittoria double-drum roaster, with a process designed for stability and repeatability.
Yes. Our process notes ~100 lb green batches (about 80 lb roasted).
Coffee does not suddenly “go bad,” but it does lose aromatics over time. For best results, store it well and brew it within a reasonable window. We recommend a shelf life of 366 days for packaged products.

Choosing a Coffee + Grind

Start with what you actually like:

  • If you like balanced and easy: try a medium roast.
  • If you like heavier body and deeper notes: try a dark roast.

If you want espresso performance: choose the espresso profile.

Whole bean stays fresher longer. If you have a grinder, that is usually the best choice. Ground coffee is for convenience and consistency when you do not want to dial a grinder.

Formats, Packaging, and Pods

Our bags lineup includes 16 oz (454 g) bags and 5 lb bags for whole bean and ground formats, depending on the product.
Yes. Our packaging is described as a plastic + foil laminate bag with an aluminum liner and a one-way degassing valve.
Our bags aren’t zipper-sealed, but they do come with a gold metal clip. After opening, roll the top of the bag down tightly and secure it with the clip to help keep the coffee fresher between brews. For the best long-term freshness (especially once the bag is opened daily), we still recommend transferring coffee to an airtight container.

Our pods are built for single-serve pod brewing. Because machine models vary, check your brewer requirements before purchasing. If you tell us your model, we can help you confirm fit (link: /contact).

Keep them cool, dry, and sealed until use. Avoid humidity and heat sources, which can dull aroma and affect brew performance.
