This coffee is roasted in Saskatchewan on an Italian Officine Vittoria double‑drum roaster in approximately 100 lb batches, yielding about 80 lb of roasted coffee. Typical roast time is 6–10 minutes depending on the profile; after roasting, the coffee is cooled quickly with air and a light water mist, rested for 24–48 hours, and packaged when it is roughly 48 hours off roast. Coffee is roasted only when there is an order, rather than to build long‑term inventory.
