Where we
come from

Rock Paper Coffee was built in the Canadian prairies, under big sky and honest weather. Western Canada is not polite; it is free, direct, vast, and unforgiving, and that spirit sits at the center of what we roast. This is a place where wind cuts, fog closes in, and long roads disappear into fields and treelines - exactly the kind of landscape that rewards preparation instead of performance.

How we work

Sourcing

We source green coffee through long-term partners in Colombia, Guatemala, and Indonesia (Sumatra), working with Avanti Gourmet Coffee in Winnipeg and Agora Merchants in New Jersey. Every lot is cupped before it ever leaves origin, moisture-tested on arrival, and held to a minimum 80–84 SCA-point standard within 10–12% moisture and one year from harvest. That combination of traceable quality and repeatability matters more to us than chasing rare, unstable lots.

 

Roasting

Roasting happens on an Italian Officine Vittoria double-drum roaster, running only 100 lb batches that finish as about 80 lb of roasted coffee. The double-wall drum acts like a controlled thermal battery: heat is stable, transfer is even, and the risk of scorching or flat spots drops away. A typical roast runs 6–10 minutes depending on profile, then the coffee is cooled quickly with air and a light water mist before resting 24–48 hours to degas.

 

Our coffee is roasted to order - not to fill a warehouse. The goal is simple: when a bag leaves our building, it is as fresh and as consistent as we can make it.

Our sourcing reflects Canadian values: paying fairly for good coffee, respecting farmers, and treating “transparency” as a practice, not a tagline. Our roasting reflects restraint: nothing extra, nothing unnecessary, strength without aggression and depth without noise
